Ingredients:
- 2 tablespoons coriander seeds (dhania)
- 1 tablespoon cumin seeds (jeera)
- 1 tablespoon fennel seeds (saunf)
- 1 tablespoon dried mango powder (amchur)
- 1 tablespoon dried pomegranate seeds (anardana)
- 1 tablespoon dried fenugreek leaves (kasuri methi)
- 1 tablespoon Kashmiri red chili powder (for color)
- 1 teaspoon turmeric powder (haldi)
- 1 teaspoon garam masala
- 1 teaspoon black salt (kala namak)
- 1/2 teaspoon asafoetida (hing)
- Salt to taste
Instructions:
- Dry roast coriander seeds, cumin seeds, and fennel seeds in a pan over medium heat until fragrant. Stir continuously to prevent burning. Once roasted, remove from heat and let cool completely.
- Once cooled, transfer the roasted seeds to a spice grinder or mortar and pestle. Grind them into a fine powder.
- Add dried mango powder, dried pomegranate seeds, dried fenugreek leaves, Kashmiri red chili powder, turmeric powder, garam masala, black salt, asafoetida, and salt to the ground spice mixture. Mix well to combine.
