There are various types of chutneys that can be served with samosas, but one of the most common ones is the tamarind chutney, also known as Imli ki Chutney. Here’s a basic recipe for Bhartiya Samosa Chutney:
Ingredients:
- 1 cup tamarind pulp (seedless)
- 1 cup jaggery (gur), grated or chopped
- 1 teaspoon roasted cumin powder (bhuna jeera powder)
- 1 teaspoon black salt (kala namak)
- 1 teaspoon red chili powder (lal mirch)
- 1/2 teaspoon ginger powder (saunth)
- 1/2 teaspoon black pepper powder (kali mirch)
- Salt to taste
- Water as needed
Instructions:
- In a saucepan, combine tamarind pulp and jaggery. Add water as needed to achieve a pouring consistency.
- Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally to dissolve the jaggery completely.
- Once the mixture comes to a boil, reduce the heat to low and simmer for about 10-15 minutes, or until the chutney thickens slightly.
- Add roasted cumin powder, black salt, red chili powder, ginger powder, black pepper powder, and salt to the chutney. Mix well to combine.
- Continue to simmer the chutney for another 5-10 minutes, stirring occasionally, until it reaches the desired consistency. If the chutney becomes too thick, you can add a little more water to adjust the consistency.
- Once the chutney is ready, remove it from the heat and let it cool completely.
- Transfer the cooled chutney to a clean, airtight jar and store it in the refrigerator until ready to use.
