“Bhartiya Pav Bhaji Masala” is a spice blend specifically used to flavor Pav Bhaji, a popular street food dish originating from Maharashtra, India. Pav Bhaji is a spicy vegetable mash served with buttered bread rolls (pav). Here’s a basic recipe for making Bhartiya Pav Bhaji Masala:
Ingredients:
- 2 tablespoons coriander seeds (dhania)
- 1 tablespoon cumin seeds (jeera)
- 1 tablespoon fennel seeds (saunf)
- 1 tablespoon dried mango powder (amchur)
- 1 tablespoon dried pomegranate seeds (anardana)
- 1 tablespoon dried mint leaves (pudina)
- 1 tablespoon Kashmiri red chili powder (for color)
- 1 teaspoon turmeric powder (haldi)
- 1 teaspoon black salt (kala namak)
- 1 teaspoon black pepper powder (kali mirch)
- 1/2 teaspoon cinnamon powder (dalchini)
- 1/2 teaspoon cloves (laung)
- 1/2 teaspoon asafoetida (hing)
Instructions:
- Dry roast coriander seeds, cumin seeds, fennel seeds, dried pomegranate seeds, dried mint leaves, Kashmiri red chili powder, turmeric powder, black salt, black pepper powder, cinnamon powder, and cloves in a pan over medium heat until fragrant. Stir continuously to prevent burning. Once roasted, remove from heat and let cool completely.
- Once cooled, transfer the roasted spices to a spice grinder or mortar and pestle. Grind them into a fine powder.
- Add dried mango powder and asafoetida to the ground spice mixture. Mix well to combine.
- Your homemade Bhartiya Pav Bhaji Masala is now ready to be used.
To prepare Pav Bhaji, use this masala to flavor the vegetable mash along with other ingredients like onions, tomatoes, bell peppers, potatoes, peas, and butter.
